Taiwanese Sesame Oil Chicken Soup

Ingredients

  • Chicken thigh/drumsticks1kg
  • Naturaa Sesame Oil2 tbsp
  • Ginger2 inches
  • Rice wine240 mL
  • Boiling water3 cups
  • Salt to taste
  • Chopped spring onion

Preparation

  • Step 1

    Heat a large pan over medium heat.
  • Step 2

    Add the Naturaa sesame oil and sliced ginger to the pan. Fry ginger slices until they reach a deep golden brown, around 7-10 minutes. Remove the ginger and set it aside for later.
  • Step 3

    Turn the heat up to medium-high and add the chicken to the pan. Roast the chicken until it is browned on all sides.
  • Step 4

    Add the ginger from before, rice wine, boiling water, and salt to the pan.
  • Step 5

    The water amount should be enough to cover most of the chicken.
  • Step 6

    Bring the soup up to a boil. Lower the heat so that the soup is at a simmer.
  • Step 7

    Cover the soup for around 15-20 minutes, or until the chicken is cooked completely and the wine flavor has mellowed out.
  • Step 8

    Taste the soup and add more salt and black sesame oil as needed.
  • Step 9

    Optionally garnish with chopped spring onion before serving.
