Clear Mushroom Soup : How to make it

This clear mushroom soup not only tastes exquisite but is also light and healthful. You can whip up a hearty bowl of soup in a matter of minutes with only a few easily found ingredients.

Clear Mushroom Soup

Ingredients

  • 200 gms White button mushrooms
  • 2 cups White spring onions, sliced
  • 1/2 tbsp Naturaa Sesame Oil
  • Garlic, finely chopped
  • 1/2 Inch Ginger, chopped
  • 1 tsp Finely chopped celery
  • 1/2 tsp Crushed black pepper
  • 1 tsp soy sauce
  • 5 tbsp Spring onion greens, chopped
  • 3 cups Water
  • Salt

Preparation

  • Step 1

    In a pan heat ½ tablespoon Naturaa sesame oil and add the chopped garlic and ginger, saute for a few seconds.
  • Step 2

    Now add the sliced spring onion whites only & saute for a minute. Now add the sliced mushrooms and chopped celery. Stir and saute for two minutes on medium flame.
  • Step 3

    Now add 3 cups of water & stir, simmer the soup for 4 to 5 minutes on a low flame.
  • Step 4

    Add 1 teaspoon gluten free naturally fermented soy sauce or regular soy sauce. Adjust preference as per taste.
  • Step 5

    Now add ½ teaspoon crushed black pepper and salt as per taste. Keep a check on salt as soy sauce already has some salt in it.
  • Step 6

    Cover with a lid and simmer the soup on a low to medium flame for 15 minutes or till the mushrooms are cooked.
  • Step 7

    Turn off the flame. Check the taste, make additions if required.
  • Step 8

    Now add 5 tablespoons of spring onion greens, chopped.
  • Step 9

    Serve clear mushroom soup hot with toast at the side.
